Tomato-Dill Couscous

Ingredients

1 TBSP olive oil
1 cup uncooked couscous
1 cup + 2 TBSP fat-free, lower-sodium chicken broth
1/8 tsp salt
1/2 cup quartered cherry tomatoes
1/4 cup finely chopped red onion
2 TBSP chopped fresh dill

(3/4 cup per serving)
Preparation
1. Heat a small sauceppan over medium-high heat. Add 1 TBSP olive oil to pan.

2. Stir in 1 cup uncooked couscous, saute 1 minute. Add broth and salt and bring to a boil. Cover, remove from heat and let stand 5 minutes. Fluff with a fork.

3. Stir in cherry tomatoes, red onion and dill.
